Ingredients
4 skinless salmon fillets (450g/1lb)
1 lemon, juiced
1 orange, juiced
2 Tbsp coconut aminos or soy sauce
240 ml (1 cup) water
2 Tbsp fresh parsley, chopped
1 Tbsp melted grass-fed butte
¼ tsp each salt and pepper

Method
Rinse the salmon and pat it dry
Squeeze the juice from the lemon and orange into a small bowl, then add the coconut aminos or soy sauce. Stir to combine
Measure out 60 ml (¼ cup) of this mixture and set aside for the dressing
Pour the remaining juice mixture and water into a large pan and bring to a boil
Add the salmon fillets to the pan, reduce the heat to medium, cover, and simmer for 8–12 minutes, or until the fish flakes easily
While the salmon is cooking, make the dressing by mixing the reserved juice mixture, parsley, melted butter, salt, and pepper in a small bowl
Remove the salmon from the pan and drizzle with the dressing before serving.
