  • 4 romano peppers 

  • 4 corn on the cob

Method

  1. Light your BBQ and allow the charcoal to stop flaming and turn white 

  2. Carve slices of the squash around 1 inch thick and skip score on both sides 

  3. Add to the grill alongside the corn 

  4. Spray lightly with oil 

  5. Add the romano peppers to the embers 

  6. Over the next ten minutes, keep turning all items to ensure an even cook 

  7. Remove and serve with pesto, guacamole, salsa verde or chimichurri
