In this recipe we bring together two succulent chicken breasts with our latest Brilliant Base, mushroom duxelles to produce a delicious and super quick lunch or dinner. The chicken is packed with protein and B vitamins, while the mushrooms add in a decent dose of vitamin D.

Ingredients

  • 2 large chicken breasts with no inner fillet 

  • 60g/2oz to 70g/2.5oz BB mushroom duxelles (see video below) 

  • 4 rashers of dry cured smoked streaky bacon

Method

  1. Pre-heat the oven to 200C/390F (fan) or 220C/430F (convection)

  2. Using a small, very sharp, thin-bladed paring knife, insert into the deepest side of each fillet, working through the flesh to create a pocket and ensuring not to break out of the other side 

  3. Spoon scoop the duxelle and stuff the pocket until full, drawing the flesh close together

  4. Lay out the two rashers of bacon per breast head to tail, then place the breast on top with what was the skin side down

  5. Fold up the rashers ensuring they cover the gap where the duxelles was pushed in

  6. Roll over to show the presentation side, place on a butter paper on a tray in the centre of the oven for 20-25 minutes to roast ensuring the thickets past of the breast is cooked to a core temp of 75 degrees C
