This delicious chilled green soup recipe has been created by Jason to give a really fresh feel for summer. 


It uses our Savoury Starter and marries it with cucumber, peas and mint that make it zing with flavour but also up the nutritional ante. Taking the ingredients one by one: 


Cucumber is an excellent source of a trace mineral called silica that helps with the strength of all our connective tissues like muscles and ligaments. 


Peas are high in protein for a vegetable, as well as being a good source of B vitamins and minerals such as magnesium, potassium and iron. 


Mint has antoxidants that give it anti-cancer properties, but is also an antispasmodic, so good for relaxing the gastrointestinal tract.  


We’re also dressing it with nigella seeds that are high in protein and fibre and crème freche chopped through with dill which is good for relieving digestive disturbances and so marries well with the mint.

Ingredients

For the soup 

  • 450g/16oz de-seeded cucumber with skin on 

  • 150g/5oz frozen garden peas, de-frosted 

  • 150g/5oz BB Savoury Starter 

  • 3tsp fresh mint leaves 

  • Sparkling mineral water (if needed to help puréing) 

  • 1tsp sea salt crystals 

Garnish (optional)

  • Creme Fraiche 

  • Chopped dill Nigella seeds 

  • Pearls of skin-on cucumber 

  • Drizzle of EV olive oil

Method

  1. In small batches add the ingredients to a high-sheer liquidiser and process into a super-smooth soup base. If it feels too thick, add a splash of mineral water

  2. Strain this through a sieve, adding anything that doesn’t make it through back into the main batch

  3. Repeat the process until all is smooth and there is just a little discardable residue in the sieve

  4. Chill in the fridge and remove for 30-45 minutes before serving

  5. Garnish as per the video
