Here’s our take on a lovely light salad Salad Niçoise, bursting with flavour and high in protein thanks to a choice of seafood options to go with it (feel free to pan roast some tofu and add for a vegan option).
There are a lot of fabulous fresh flavours in the ingredients here and most of them bring a lot of functional nutrition with them as well.
The seafood is high in protein, good fats and vitamin B12, while the eggs add more protein and a dose of vitamin D, which is essential for many of the body’s functions.

Ingredients
150g/5oz new potatoes
100g/4oz green beans
50g/1.8oz pitted black olives
2 medium eggs
100g/4oz tomatoes
150g/5oz Romaine lettuce
30g/1oz capers
30g/1oz anchovies
30g/1oz lemon juice or light vinegar (or mix of both)
30g/1oz extra virgin olive oil
1tsp sea salt
0.5tsp black pepper
75g/2.6oz tuna loin/langoustines/tiger prawns

Method
Pre-boil the new potatoes and allow to cool
Pre-boil your eggs as per our skills video (see below). Allow to cool
Pre-boil your beans as per our skills video (see below). Allow to cool
Add the lettuce to bowl along with all ingredients except the eggs and the seafood
Season with salt and pepper and toss.
Drizzle with olive oil, vinegar and or lemon juice and toss again
Build the salad on the plate
Quarter the eggs and add to the salad
Pan roast/sear the seafood option
Place on / around the salad as per the video
