An essential cornerstone of any Spanish tapas bar menu, patatas bravas are usually fried potatoes livened up with spices, chillies and tomatoes.
Our version again optimises our Brilliant Bases tomato fondue and house rub to elevate the dish, while we reduce the starchier white potatoes with sweet potatoes and leave them skin-on for extra fibre (which guards against blood sugar spikes) and vitamin value.
Sweet potatoes, meanwhile, are an excellent source of beta carotene (a precursor of vitamin A), vitamin C, and potassium.

Ingredients
1kg/35oz sweet potatoes – skin on
250g/9oz BB Tomato Fondue
50g/1.8oz extra virgin olive oil
50g/1.8oz Elevated BBQ house rub
4tsp smoked garlic
4tsp red chillies
2tsp fresh basil leaves

Method
Pre-heat the oven to 200C/390F (fan) or 220C/430F (convection)
Dice the potatoes circa 1inch (2.5cm) square
Chop and dice/slice the chillies and the garlic
Toss the diced potatoes in the oil and the House Rub
Place on a tray in the oven until cooked, turning continually throughout until a knife can pierce them without resistance
Add the diced chilli and sliced garlic and fold in
Return to the oven for 2-3 mins
Add the Tomato Fondue and sliced basil leaves and fold in
Return to the oven for 12-15 mins to heat the sauce
Serve while hot
