Our latest Brilliant Base is this lovely, simple and yeast-free bread dough to be used as a vehicle for many different recipes. It’s also highly fortified with our organic butter and whole milk and super easy to work with.

About This Recipe

This lovely, simple and yeast-free (for those with an intolerance) bread dough to be used as a vehicle for many different recipes. It’s also highly fortified with our organic butter and whole milk and super easy to work with. 


We’ve made this as simple as possible so it can be brought together in minutes and then used in a variety of different ways. When we introduced this with a view in mind that it could be used for a number of different party foods and the weights and measures are for a 1kg batch. When weighed out at 25-30g/1oz of party food, it gives you around 40 portions, perfect for the three recipes (see below). 


This is a great recipe for getting the kids involved in the fun of making things as it has a low risk of failure and can be turned into numerous different dishes: small Calzone pizza, naan style tandoor breads, gyros style flat breads or you can add inclusions of dried fruits and candid peel for a ‘scone like’ treat.

Ingredients

  • 300g/11oz organic self raising flour 

  • 300g/11oz organic strong white /wholemeal flour 

  • 100g/4oz organic butter (melted) 

  • 2tsp sea salt crystals finely ground 

  • 2tsp baking powder 

  • 1 large free range egg (circa 60g/2oz) 

  • 220g/7oz-250g/9oz organic whole milk

Method

  1. Have all the ingredients come up to room temperature

  2. Blend all together in mixer with a dough hook for around five mins – you may need to add a splash more milk dependent upon egg size and moisture within the flower

  3. Leave in cling film to rest for around 15 minutes

  4. Weigh, divide and cook according to each recipe method

  5. Can be used within 2-3 days if kept in the fridge
