This recipe is a perfect example of how you can elevate a classic, much-loved snack like sausage rolls into something more nutritious while maintaining its delicious appeal.


Jason developed this recipe for his son Christian, who has autism, and loves helping in the kitchen. Not only does this give Christian the opportunity to develop his skills, but it also provides a way for Jason to transform one of Christian’s favourite store-bought snacks into a healthier, more nutritious option, showing the beauty of home cooking with an intentional, wholesome twist.


By using high-protein, high-welfare sausages, Jason ensures that the sausage rolls are packed with quality protein, helping to support muscle repair and immune function. High-welfare meat often means fewer additives, less processed ingredients, and better omega-3 to omega-6 ratios, which are essential for managing inflammation in the body.


Flaxseed is another powerhouse addition to this recipe. Not only does it add fibre, which supports gut health and helps with digestion, but it’s also a fantastic source of omega-3 fatty acids, which are known for supporting heart and brain health. Ingredients

  • 320g pre-rolled puff pastry

  • 400g 6-pack of high protein, high welfare sausages

  • 30g flaxseed

  • 5g smoked paprika

  • 5g dried tarragon

  • 1 egg yolk

  • 15g nigella seeds

Method

  1. Heat the oven to 180C/360F (fan) or 200C/390F (convection)

  2. Remove the pastry from the fridge and allow to warm at room temperature for 10-15 minutes

  3. Whisk the egg yolk with a pinch of sea salt and a tablespoon of water

  4. Unroll the pastry

  5. Stir together the flax seed, herbs and spices

  6. Using pair of scissors, remove the skins from the sausages

  7. Roll the de-skinned sausage in the dry mix, to cover all the way round.

  8. Lay the sausages two at a time on the pastry, edge to edge they should fit on the shorter length

  9. Use a pastry brush to to apply the egg wash around the 3 sides, then fold over and roll, use the packing paper to help you

  10. Cut the pastry and nip down the edges to seal

  11. Add to a baking sheet lined with silicon paper

  12. When all are finished, brush with egg wash, sprinkle with Nigella seeds and rest in fridge 10-15 mins so the gluten relaxes, and fats solidify

  13. Bake in the oven for around 20 minutes until golden
