By adding mixed seeds and hazelnuts to this cracker recipe, you’re turning an everyday snack into a source of healthy fats, fibre, and plant-based protein. The seeds offer a rich blend of omega-3 and omega-6 fatty acids, which are essential for brain health and inflammation reduction, while the hazelnuts bring in Vitamin E, known for its antioxidant properties and skin health benefits.

Ingredients
320g pre-rolled puff pastry
100g mixed seeds
100g nibbled hazelnuts
1 egg yolk
30g Icing/powdered sugar

Method
Heat the oven to 180C/360F (fan) or 200C/390F (convection)
Remove the pastry from the fridge and allow to warm at room temperature for 10-15 minutes
Whisk the egg yolk with a pinch of sea salt and a tablespoon of water
Unroll the pastry
Brush the egg wash over the entire sheet
Sprinkle the nuts, seeds and hazlenuts over the pastry and press down, dust with any extra spices you might like such as cinnamon or nutmeg, then roll back up like a carpet
Place back in the fridge for 10 minutes, then remove and slice into 12 slices
Sprinkle a flat surface with icing sugar and use a rolling pin to roll each slice into an oval shape
Lay each one on a flat baking sheet covered with baking paper
All to sit for 5-10 minutes
Place some baking paper on a flat baking sheet and lay each oval on to it
Sprinkle a little more icing sugar on top and place in the oven to cook until golden brown and very crispy (around 10-12 mins)
Allow to cool on rack and keep in an air tight container for 7-10 days.
