425 g (15-oz) can garbanzo beans, rinsed and drained
2 Tbsp lime juice
3 Tbsp extra virgin olive oil
1 Tbsp water
2 small garlic cloves, peeled
1 tsp sea salt
½ tsp freshly ground black pepper
40 g (1 cup) fresh spinach leaves
8 g (½ cup) fresh coriander/cilantro leaves
12 g (¼ cup) fresh parsley leaves
3 Tbsp sliced green onions

Method
Place the garbanzo beans, lime juice, olive oil, water, and garlic in a food processorBlend until smooth
Add the sea salt and black pepper, then pulse a few more times to combine
Add the spinach, cilantro/coriander, parsley, and green onions
Pulse a few times until the mixture is well combined but still has texture
If needed, add more water a few drops at a time to reach your desired consistency
Taste and adjust the salt to preference
Transfer to a medium bowl and chill until ready to serve
