Ingredients

  • 425 g (15-oz) can garbanzo beans, rinsed and drained

  • 2 Tbsp lime juice

  • 3 Tbsp extra virgin olive oil

  • 1 Tbsp water

  • 2 small garlic cloves, peeled

  • 1 tsp sea salt

  • ½ tsp freshly ground black pepper

  • 40 g (1 cup) fresh spinach leaves

  • 8 g (½ cup) fresh coriander/cilantro leaves

  • 12 g (¼ cup) fresh parsley leaves

  • 3 Tbsp sliced green onions

Method

  1. Place the garbanzo beans, lime juice, olive oil, water, and garlic in a food processorBlend until smooth

  2. Add the sea salt and black pepper, then pulse a few more times to combine

  3. Add the spinach, cilantro/coriander, parsley, and green onions

  4. Pulse a few times until the mixture is well combined but still has texture

  5. If needed, add more water a few drops at a time to reach your desired consistency

  6. Taste and adjust the salt to preference

  7. Transfer to a medium bowl and chill until ready to serve
