Ingredients
1.5 courgettes per person
50g/1.8oz Elevated tomato fondue per person
1tsp of pine nuts
2tsp of parmesan drizzle of olive oil

Method
Wash the courgettes (1.5 per person) and top and tail, then use a speed peeler to cut thin strips, rotating the courgette as you go. Keep the seedy middle bit to add to soups or stews
Warm the BB Tomato Fondue in a separate pan
Heat the olive oil in a deep-based frying pan or wok and 'flash fry' the courgette for around two minutes to drive off as much steam as possible
Fold the warm fondue through the courgette
Serve with toasted pine nuts, a drizzle of olive oil and parmesan or nutritional yeast
