In this side dish or dip, our guest chef for this month, Marcia Clarke of Abundance Foods Leeds has come up with another way of using our Tomato Fondue Brilliant Base with this incredible fresh-tasting salsa. 


It’s packed with anti-inflammatory fresh turmeric which is then further activated by the black pepper used, as well as lots of other anti-inflammatories: chillies, peppers and coriander, as well as our old Elevated favourite apple cider vinegar, which as we know by now is good for the upper digestive system.

Ingredients

  • 400g/14oz BB Tomato Fondue or 1 tin organic chopped tomatoes 

  • 4 tsp tomato puree 

  • 1 red onion 

  • 1 green pepper 

  • 1 large pinch of Pink Himalayan or fine sea salt 

  • 2-3 chopped chillies (based on how much heat you like) 

  • 3 tsp organic apple cider vinegar 

  • 2 tsp raw unprocessed sugar (such as muscovado or coconut) 

  • 1 clove of garlic 

  • 1 handful of freshly chopped coriander 

  • 1 tsp organic ground or freshly grated turmeric 

  • 1 large pinch of freshly ground black pepper 

  • Juice of 1 lemon

Method

  1. Place all ingredients in a food processor and pulse until you achieve your desired consistency. Around 5-10 pulses for a chunky salsa or longer for a smoother style

  2. Enjoy with plain tortilla chips or flatbreads or veg batons, such as carrots, celery, cucumber etc
