Here's another of our Brilliant Bases, our aromatic nage. Full of flavours and nutrients from eastern cuisines, it can be used as everything from a broth for a ramen bowl to a base for Thai red curry.

About This Recipe
Before the introduction of Western eating habits, countries such as Japan, China and India historically had low incidences of conditions such as cardiovascular disease, obesity and diabetes – and this may have been down to some of the herbs and spices they freely use.
This Aromatic Nage takes some of those herbs and spices and packs them into a broth that is full of flavour and naturally fortified with hidden vitamins. After simmering for a few hours, pureeing the skins and fibrous tissues not only acts as a thickener, but adds much-needed, gut-healthy fibre to the diet.
Ingredients, such as garlic, lemongrass, ginger, garlic and chillies, all support the immune system, while garlic and onions are also great for improving circulation and lowering blood pressure.

Ingredients
75g/2.6oz ginger (skin-on)
250g/9oz coconut sugar
50g/1.8oz tamarind paste
50g/1.8oz lemongrass sticks
2tsp kaffir lime leaves
2tsp star anise
100g/4oz garlic crushed whole
200g/7oz spring onions
75g/2.6oz red chillies (de-seeded)
100g/4oz fresh coriander
100g/4oz soy sauce
1500g/53oz water

Method
Slice or chop all the ingredients
Add to a deep-based pan, cover & bring to the boil
Simmer with the lid on for 3-4 hours
Take off the heat and blitz in a liquidiser OR use a stick blender
Pass through a fine sieve or chinois, ensuring as much liquid is extracted as possible
