About This Recipe
This goat’s cheese and vegetable tart beautifully marries our latest Autumn roast roots Brilliant Base with the versatility of pre-made puff pastry, turning a simple vegetable dish into something far more decadent and indulgent, but still balanced in terms of nutrition.
By using the roasted root vegetables on top of the pastry as a base, we bring a wealth of fibre, vitamins, and minerals into this tart. The roast root veggies are full of antioxidants, which help reduce inflammation and support overall well-being, while the combination of vegetables brings a colourful mix of carotenoids and other phytonutrients.
The puff pastry adds a satisfying crispness, but when paired with the rich, tangy ash-rolled goat cheese, it becomes more than just a vessel—it’s an indulgent but balanced meal.
Goat cheese is an excellent source of high-quality protein, along with beneficial fats that are easier to digest for many compared to cow's milk cheeses. It also contains calcium, helping to support bone health, and medium-chain fatty acids, which are metabolised more quickly than other fats, making it a great energy source.
Adding fresh sage and garlic powder introduces not only flavour but also functional health benefits. Sage has long been recognized for its antioxidant and anti-inflammatory properties, while garlic powder brings immune-boosting and heart-healthy compounds. Nigella seeds are another star of this recipe, providing an extra dose of anti-inflammatory and antioxidant support, adding both crunch and nutritional value to the tart.
The combination of flavours and textures here strikes a perfect balance between indulgence and nutrition, making this tart both a showstopper on the table and a nourishing meal. It's a great example of how our "Elevate Your Every Day" concept can take base ingredients like the roasted vegetables and transform them into something special.
