By using the roasted root vegetables on top of the pastry as a base, we bring a wealth of fibre, vitamins, and minerals into this tart. The roast root veggies are full of antioxidants, which help reduce inflammation and support overall well-being, while the combination of vegetables brings a colourful mix of carotenoids and other phytonutrients.


The puff pastry adds a satisfying crispness, but when paired with the rich, tangy ash-rolled goat cheese, it becomes more than just a vessel—it’s an indulgent but balanced meal.


Goat cheese is an excellent source of high-quality protein, along with beneficial fats that are easier to digest for many compared to cow's milk cheeses. It also contains calcium, helping to support bone health, and medium-chain fatty acids, which are metabolised more quickly than other fats, making it a great energy source.


Adding fresh sage and garlic powder introduces not only flavour but also functional health benefits. Ingredients

  • 320g pre-rolled puff pastry

  • 600g of our BB Roast Root Veggies

  • 5g garlic powder

  • 10g dried onions

  • 5g nigella seeds

  • 8-10 fresh sage leaves sliced 

  • 200g goat’s cheese

  • 1 egg yolk wash

Method

  1. Heat the oven to 180C/360F (fan) or 200C/390F (convection)

  2. Remove the pastry from the fridge and allow to warm at room temperature for 10-15 minutes

  3. Whisk the egg yolk with a pinch of sea salt and a tablespoon of water

  4. Unroll the pastry

  5. Then using a pastry brush egg wash the entire sheet right to the edges

  6. Toss the veggies with the herbs and spices

  7. Load the pastry with the tossed seasoned roast veggies, leave a 1am gap at the edges

  8. Slice the goat’s cheese and arrange on the veggies

  9. Bake in the oven until the outer edge is golden and crispy
