About This Recipe

At a BBQ, it’s usually all about the meat but in this BBQ skewers recipe we’re going for some mainly vegetable skewers, some interspersed with different kinds of protein. 


From a vegetable perspective, we have some Provençal-style veggies on offer: courgettes high in potassium to help with muscle movement, nutrient dense and anti-oxidant packed eggplant, mushrooms that are a food source of vitamin D and red peppers, bursting with vitamin C which not only helps with immune function but also needed to help us absorb calcium better for bone building. 


From a protein perspective, we have three options: chicken which is high in protein and B vitamins, a calcium-rich salty halloumi and tofu. Remember, if you’re a lady approaching a certain age, soy, from which tofu is made, contains phytooestrogens, plant substances that mimic oestrogen and help manage levels of this important hormone. 


For added nutritional value, the tofu and chicken are marinated in our Brilliant Base Creamy Dressing/Marinade. Don’t limit yourself in thought around suitable proteins, tender cuts; like beef sirloin or fillet, lamb prime cuts, fillets, loins and rump will cook out to core temp 75C/170F and still remain juicy within 15-20 minutes, tiger prawns, tuna, salmon, monkfish are also wonderful when marinated and then skewered ahead of grilling.

Ingredients

  • 100g/4oz chicken/tofu/halloumi 

  • 3 mushrooms 

  • 3 chunks red pepper 

  • 3 petals of onion 

  • 3 courgette 'coins' 

  • 3 chunks aubergine 

  • 4tsp BB Creamy Dressing/Marinade

Method

  1. Light the BBQ or turn on the oven to 180C/360F (fan) or 200C/390F (convection)

  2. Marinade the protein (except halloumi) in our Brilliant Base Creamy Dressing/Marinade for about an hour

  3. Slice and dice the veg except the mushrooms (leave these whole)

  4. Skewer alternate pieces of veg and protein on the skewers

  5. Cook on the BBQ/oven/salamander grill for 18-20 minutes. Ensure the protein is cooked through

  6. Serve with a selection of Elevated extras such as our quick flatbreads, BB creamy dressing or salsa verde
