Here’s a really simple second use for the Brilliant Base Pizza Dough, turning it into a breakfast flatbread wrap. It’s a super simple and speedy alternative way to use the dough as an alternative to bread – remember once again, you know exactly where the ingredients come from and by combining it with our other Brilliant Base Tomato Fondue (or passata if you have none ready), you’re packing in even more nutrients.
The cooked flat breads will last for three days at ambient temperature or a week in the fridge. Ensure you warm though gently (microwave / steamer / oven) before trying to fold or manipulate.

250g/9oz of our Brilliant Base Pizza Dough
50g/1.8oz of Brilliant Base Tomato Fondue
50g/1.8oz mozzarella or other melting cheese
Bacon/sausage/halloumi/grilled tofu to taste

Method
Follow the procedure to make a batch of our Brilliant Base Pizza Dough
Divide into four and roll into 5-6 inch (13-15cm) rounds
Heat some coconut/olive oil in a solid, large bottom frying pan
Lay the flat, hand-stretched dough into the pan and cook over a medium to low-heat for 2-3 minutes, flipping as you go
The flatbread will blister and bubble, this is what we want to happen
Slide onto a plate and layer with Tomato Fondue Brilliant Base and any other ingredients you like
Place in the oven to warm through if you wish
Fold, roll and treat as a tortilla
