Roasting cherry tomatoes elevates their natural sweetness and adds depth of flavour to this comforting soup recipe. Tomatoes are rich in vitamins A, C, and K, along with folate, potassium, and lycopene, a powerful antioxidant that may protect against UV damage. 


Bone Marrow Broth provides additional nutrients, including collagen for joint and gut health. Paired with creamy coconut or oat milk, this soup is as nourishing as it is delicious.

Ingredients

  • 2kg / 4lbs cherry tomatoes

  • 1 medium yellow onion, chopped

  • 5 cloves garlic, peeled 60 ml

  • (¼ cup) extra-virgin olive oil

  • ½ tsp pink Himalayan salt

  • ½ tsp freshly ground pepper

  • 1–2 tsp coconut sugar

  • 1 tsp dried thyme

  • ½ tsp dried marjoram

  • 120–240 ml (½–1 cup) Bone Marrow Broth Brilliant Base

  • 120–240 ml (½–1 cup) unsweetened coconut milk or extra creamy oat milk (adjust for thickness)

Method

  1. Preheat your oven to 200°C/400°F

  2. Spread the cherry tomatoes, onion, and garlic in an even layer on two rimmed baking sheets

  3. Divide the olive oil evenly between the sheets and toss with the tomatoes until well coated

  4. Sprinkle with salt and pepper, stir to coat, and place in the oven

  5. Stir every 10 minutes and roast for 20–25 minutes, until the tomatoes start to burst

  6. Transfer the roasted tomatoes, onions, and garlic to a large soup pot

  7. Add the coconut sugar, spices, ½ cup each of Bone Marrow Broth and milk, and additional salt and pepper to taste

  8. Use an immersion blender to puree the mixture until smooth

  9. Add more broth or milk if the soup is too thick, blending again until you reach the desired consistency

  10. Place the pot on medium-low heat to warm through

  11. Adjust seasoning as needed, serve, and enjoy!

  12. Alternatively, you can just mix BB Bone Marrow Broth with BB Tomato Fondue on a 50:50 basis, blend and heat through.
